Sydney has plenty of bakeries. It has no shortage of croissants either. But Lune is different.

The cult croissanterie founded by Kate Reid confirmed plans for not one, but two Sydney locations, giving the city the kind of pastry news that actually makes people plan a day around it.

The first Sydney site was set for Rosebery, with another planned for the Martin Place metro precinct. For a brand that built its reputation in Melbourne before expanding to Brisbane, the Sydney move had been anticipated for years.

Lune's appeal has never been just about pastry. It is about precision, theatre and scarcity. Reid, who has an engineering background, built the brand around an almost obsessive approach to croissant-making. That story has helped turn Lune into one of Australia's most talked-about bakery brands.

The Rosebery flagship made sense. It offered the kind of space needed for a serious production operation, while still sitting close enough to Sydney's inner-city food crowd. Martin Place, on the other hand, placed Lune directly in the path of office workers, commuters and CBD pastry hunters.

For Sydney, the announcement was also a sign of how much the city's bakery culture has changed. A great croissant is no longer just a breakfast item. It is a destination.

Lune's arrival in Sydney was not just another food opening. It was the arrival of a brand with a following, a reputation and a very clear understanding of how to turn laminated dough into a cultural event.
